1 Mins read

Intro: Malhan, who recently opened her third Indian cuisine restaurant `Raag’ in Delhi speaks about her restaurants, their diversity, customer profile and other things. What sets her restaurants apart is the attention to detail with food menus, décor and interiors-everything reflecting years of travel and research.

Q: How did you think of starting a restaurant business? Can you share a bit about each restaurant profile?

A:  The idea to start a restaurant came from my travels and love for diverse cuisines. Each of my restaurants has a unique identity: Miss Nora in Delhi offers rich and vibrant Pan-Asian flavors, Mystras in Goa blends European and Pan-Asian cuisines for a distinct dining experience, and Raag in Delhi is a fine dining Indian restaurant that celebrates both traditional and contemporary Indian dishes.

Q: You have three restaurants in different geographies, how do you manage them?

A: Managing restaurants in different locations involves having strong local management teams and keeping consistent communication with them. I also make it a point to visit each location regularly to stay involved and connected with both the staff and the customers.

Q: What is your customer profile?

A: Our customers are diverse. At Miss Nora, we attract food adventurers who love exotic Pan-Asian flavors.  Mystras appeals to those who enjoy sophisticated fusion cuisine. Raag, on the other hand, draws in fans of Indian cuisine, including both locals and tourists who appreciate fine dining.

Q: How do you promote your restaurants?

A: We promote our restaurants through social media, collaborations with food influencers, targeted ads, special promotions, and hosting events. This keeps our customers engaged and excited about what we offer.

Q: How have platforms like Zomato and Swiggy affected your business?

A: Platforms like Zomato and Swiggy have expanded our reach and increased delivery orders, though their commission structures require careful management. They have overall had a positive impact on our visibility and accessibility.
